Mini Jacket Potatoes
with chilli jam

Easy to make and perfect for sharing...

Mini sized novelty potato bites - a simple idea when entertaining friends. Just bung them in the oven.
Makes roughly: As many as you want.

Takes me about 1 hour

What do I need?
  • Baby new potatoes
  • Olive Oil
  • Soft cream cheese
  • Fresh live chives 
  • By Oli’s chilli jam
  • Salt
  • Pepper

How do I do it?
  • Heat oven to 190C/170C fan/gas 5.
  • Drizzle some oil on the potatoes – this makes the potato skins to get crispy, brown and develop a soft but crunchy outer layer. Then sprinkle with a little sea salt.
  • Then bake them in the oven dish for about a 50 minutes. Remember to keep an eye on them. Because they will be different shapes and sizes, some may take a little longer then others!
  • Best way to check their done is to pierce the skin with a fork. The potato skin should give and the inside should feel fluffy & soft inside.
  • When ready, remove them from the oven. Leave them on the side to cool for about 10 mins.
  • Once they’ve cooled, use a knife & make a cross in each potato. This will make a nice pocket for your filling.
  • Pop a teaspoon of soft cream cheese to each, followed by a touch of By Oli chilli jam.
  • Finish these tasty little bites off with some freshly ground black pepper, some crystal sea salt and sprinkle some finely chopped chives for decoration.
  • They’re now ready to serve! Have one before you share them with guests because they won’t last long!
