Soft cream cheese with garlic toasts

Another simple recipe, perfect for sharing with friends...

What do I need?

  • 6 pitted green olives
  • chopped fresh chives, tarragon and mint, a table spoon of each
  • unwaxed lemon, grated lemon zest. Lemon zest has quite a strong taste so be moderate with your sprinkle!
  • ricotta cheese
  • large baguette
  • 1 garlic clove, halved

How do I do it?

  • Mix the green olives, chopped herbs in a bowl and leave to one side
  • Slice the baguette and place under the grill on medium for 1-2 minutes on each side until golden brown or just pop them in the toaster. They only need to crisp up a little bit. Make sure you keep an eye on them as they won't need long in the toaster
  • Once your baguette is toasted, rub the garlic halves over toast slices
  • Place a spoonful of ricotta dip on each of your mini toasts
  • Sprinkle the mix of olives and herbs on top of each toast
  • Add a dollop of chilli jam on each toast
  • Garnish with some of the remaining chopped herbs and add a little lemon rind on the top
